Slim Spanish Rice(Sugar-Free) - cooking recipe

Ingredients
    1 (8 oz.) can whole tomatoes (1 c.)
    1/2 c. Uncle Ben's converted rice
    1/3 c. chopped onion
    1/4 c. chopped green pepper
    1/4 c. thinly sliced celery
    1 small bay leaf
    1 garlic clove, minced
    1/8 to 1/4 tsp. dried red pepper flakes
    1/4 tsp. each: thyme and salt
Preparation
    Drain and coarsely chop tomatoes, reserving juice.
    Add water to juice to equal 1 1/3 cups.
    Bring to a boil in small saucepan. Stir in all ingredients.
    Cover tightly and simmer 20 minutes. Remove from heat; let stand, covered, until most of liquid is absorbed, about 5 minutes.
    Remove bay leaf.
    Makes 2 servings.
