Cornmeal Yeast Muffins - cooking recipe
Ingredients

1 pkg. dry yeast
1/4 c. warm water (105~ to 115~)
1 3/4 c. skim milk
1/3 c. sugar
1/4 c. vegetable oil
1/4 c. reduced-calorie margarine
1 tsp. salt
1/2 c. egg substitute
1 1/2 c. plain cornmeal
5 to 5 1/2 c. all-purpose flour, divided
butter-flavored vegetable cooking spray
Preparation

Dissolve yeast in warm water in a large bowl; let stand 5 minutes.
Combine milk and next 4 ingredients in a saucepan.
Cook over low heat until margarine melts.
Cool to 105\u00b0 to 115\u00b0.
Add milk mixture to yeast mixture. Stir in egg substitute, cornmeal and 2 cups flour.
Beat at medium speed with an electric mixer until smooth. Stir in enough remaining flour to make a soft dough.
