Hot Sausage - cooking recipe

Ingredients
    2 lb. pork shoulder, cubed
    2 Tbsp. paprika
    1 Tbsp. cayenne pepper
    2 Tbsp. red pepper sauce
    2 Tbsp. fennel seed
    1 Tbsp. hot pepper flakes
    1 glass red wine
    4 lb. casings (optional)
Preparation
    In a large bowl combine all ingredients, blending thoroughly. Let mixture stand for 20 minutes to allow flavors to blend.
