Chicken In Peanut Sauce - cooking recipe

Ingredients
    1 lb. chicken breast halves, skinned and boned
    4 oz. vermicelli noodles
    1/4 c. smooth peanut butter
    3 Tbsp. soy sauce (preferably low sodium)
    2 Tbsp. red wine vinegar
    1 Tbsp. plus 1 tsp. Oriental sesame oil
    1 clove garlic, crushed
    1/4 tsp. hot red pepper, crushed
    3 Tbsp. water
    1/4 c. julienned red bell pepper
    1/4 c. julienned cucumber
    2 c. shredded iceberg lettuce
Preparation
    In a 3-quart saucepan over high heat, bring 2 quarts water to boil.
    Add chicken breast halves and reduce heat to low.
    Cook 10 to 15 minutes until chicken is cooked through.
    Using a slotted spoon, remove chicken to plate.
    Return water to boil; add vermicelli and cook 5 to 7 minutes until just tender.
