No Mayonnaise Potato Salad - cooking recipe

Ingredients
    2 1/2 lb. potatoes
    1 medium yellow onion, chopped
    1/2 c. canola or olive oil
    1/2 c. white wine vinegar
    2 tsp. salt (or to taste)
    1 1/2 tsp. sugar
    1/4 tsp. white or black pepper
    1 1/2 tsp. dry mustard
    1/4 c. chopped flat leaf parsley
Preparation
    Cook potatoes in boiling water 20 minutes or until tender. When cool enough to handle, but still warm, peel and cut into 1-inch cubes.
