"Praise The Lord Muffins" - cooking recipe

Ingredients
    8 oz. can crushed pineapple, undrained
    2 c. flour
    3/4 c. sugar
    2 tsp. baking powder
    1/2 tsp. cinnamon
    1/4 tsp. ginger
    1/2 c. shredded carrots
    1/2 c. raisins
    2 eggs
    1 tsp. vanilla
    1 stick butter or margarine
Preparation
    Combine flour, sugar, baking powder, cinnamon and ginger. Stir in carrots and raisins.
    Separately combine undrained pineapple, eggs, butter and vanilla.
    Stir into dry ingredients until just blended.
    Spoon into 12 greased muffin tins.
    Bake at 375\u00b0 for about 25 to 27 minutes.
    Turn on rack to cool.
    Serves 12.
