Spinach Shrimp Casserole - cooking recipe
Ingredients

2 eggs
3 c. cooked orzo (rice size pasta)
1 (15 1/2 oz.) jar chunky spaghetti sauce
1/3 c. grated Parmesan cheese
1 (10 oz.) frozen chopped spinach, cooked
4 oz. fresh or frozen bite-size shrimp, thawed
1/2 c. shredded Mozzarella
1/2 c. Ricotta cheese
1/4 tsp. nutmeg
1 tsp. butter or margarine
Preparation

In bowl, combine beaten eggs, cooked orzo, 1/2 cup spaghetti sauce and Parmesan cheese. Grease 9-inch pie plate. Spread mixture over bottom and up side of pan to make a \"crust.\" Drain cooked spinach well. In another bowl, combine spinach, Ricotta cheese, nutmeg and shrimp. Spoon into pie plate. Spread remaining spaghetti sauce over filling. Cover edge of plate with a small piece of foil to prevent burning. Bake at 350\u00b0 for 30 minutes. Remove from oven and bake an additional 3 to 5 minutes or until cheese is melted. Makes 8 large servings.
