French Market Soup(Serves 10 Plus) - cooking recipe

Ingredients
    2 c. 16 bean and peas mix
    3 qt. water
    2 ham hocks
    2 tsp. thyme
    1 or more (28 oz.) cans tomatoes (undrained)
    2 onions, chopped
    4 celery stalks, chopped
    2 cloves garlic, minced
    salt and pepper to taste
    1 lb. summer sausage, cut up
    2 or more chicken breasts, cooked and cut up
    1/2 c. red wine (optional)
    1/2 c. fresh parsley, cut up (optional)
Preparation
    Wash and drain 16 bean and peas mix.
    Add 3 quarts water with ham hocks and thyme.
    Simmer, covered, 2 1/2 to 3 hours.
    Add next 4 ingredients and salt and pepper.
    Simmer, covered, 1 1/2 hours until creamy.
    Add sausage and chicken; simmer 30 to 40 more minutes.
    Add the optional ingredients, if desired.
    Best made the day before!
