Potato Salad - cooking recipe

Ingredients
    6 medium size potatoes
    1 1/2 Tbsp. vinegar
    3 Tbsp. oil
    1 tsp. salt
    1/4 tsp. pepper
    1/8 medium size onion, grated or chopped finely
    1/2 c. chopped green pepper
    1/2 c. chopped celery
    1/2 c. mayonnaise
Preparation
    The night or morning before serving, wash and steam or boil the potatoes in their skins.
    As they steam or boil, combine vinegar, oil, salt, pepper and grated onion for the marinade.
    When potatoes are tender, peel them while they are still hot and dice into the marinade.
    Add celery and green pepper; toss lightly so they do not break or become mushy.
    Refrigerate.
    Add mayonnaise a half hour before serving.
    Serves 6.
