Ingredients

1 baked 9-inch pie shell
3/4 c. water
3/4 c. sugar
1/4 tsp. salt
4 c. strawberries
3 Tbsp. cornstarch
Preparation

Crush 1 cup berries in saucepan; add water, bring to boil, simmer for 3 minutes.
Strain juice from cooked berries (discard berries).
Add water to juice to make 1 cup if needed.
Combine sugar, cornstarch and salt in pan; slowly stir in the berry juice. Bring to a boil, stirring constantly, cook 3 minutes.
(A few drops of red food coloring may be added, if desired).
Cool slightly; while cooling, arrange remaining (3 cups) sliced or quartered berries into pie shell.
Pour glaze over berries and chill.
Top with whipped cream before serving.
