Sweet Potatoes And Apricots - cooking recipe

Ingredients
    3 large yams
    3 Tbsp. brown sugar
    1/8 tsp. cinnamon
    1/4 c. raisins
    1/2 tsp. grated orange rind
    1 (17 oz.) can apricots
    1 Tbsp. cornstarch
    dash of salt
    3 Tbsp. sherry
Preparation
    Cook 3 yams or enough yams; slice crosswise to make one layer in 12 x 8-inch flat pan.
    Drain apricots and add enough water to make 1 cup of juice.
    Mix brown sugar, cornstarch, cinnamon and dash of salt.
    Add the cup of drained juice.
    Add raisins to juice mixture and bring to a boil.
    Cook until thick, stirring constantly.
    Add sherry and grated orange rind to hot sauce and pour carefully over fruit and potatoes.
