Mary'S Rice Casserole - cooking recipe

Ingredients
    2 c. long grain rice
    1/3 c. butter
    1 medium onion, chopped
    4 c. rich chicken stock
    5 to 6 mushrooms, washed and chopped
    salt and pepper
Preparation
    Wash rice and drain well.
    Melt butter over low heat in large pan. Add onion and cook slowly until soft, but not brown. Stir in rice and mix well. Add chicken stock and bring to a
    boil. Season to taste.
    Pour in a large casserole. Cover with aluminum foil and bake at 350\u00b0 for 35 minutes.
    Remove from oven. Do not remove foil and set aside.
