Ingredients

3 lb. potatoes, peeled
1 lb. onion
juice of 1 lemon
2 eggs
1/4 c. flour
1/4 c. matzo meal
1 tsp. garlic powder
salt and pepper to taste
oil as needed for pan frying
Preparation

Grate the potatoes and onion together into a stainless steel bowl; toss with the lemon juice to prevent discoloration.
Place the potato mixture in a china cap or strainer and squeeze out the liquid.
Drain well.
Return the mixture to a bowl and add the remaining ingredients except for the oil.
Blend the mixture well and allow to stand for 20 to 30 minutes.
