Corn Fritters - cooking recipe
Ingredients

2 c. fresh corn kernels
3 Tbsp. each: minced green onion and green pepper
1/2 c. unbleached flour
1/3 c. grated Parmesan cheese
1/4 tsp. each: baking powder and salt
dash of pepper
2 eggs, lightly beaten

Preparation

Toss together corn, onion, green pepper, flour, cheese, baking powder, salt and a dash of pepper.
Stir in eggs.
Heat enough oil to cover the bottom of a frying pan to about 1/8-inch, then drop in 2 to 3 tablespoons fritter batter and cook 3 minutes on each side.
Serves 4.
