Strawberry Mousse - cooking recipe

Ingredients
    1 egg
    2 envelopes unflavored gelatin
    1 Tbsp. cornstarch
    1 Tbsp. cold water
    1 c. boiling water
    2 c. sliced fresh strawberries or frozen, thawed and drained
    1 c. plain, low-fat yogurt
    8 packets Equal sweetener (NutraSweet)
Preparation
    Combine egg, gelatin, cornstarch and cold water.
    Stir to blend.
    Add boiling water.
    Blend thoroughly.
    Puree strawberries. Add gelatin mixture.
    Add yogurt and Equal; blend until mixture is smooth.
    Chill overnight or until set, about 4 hours.
    Blend again. Pour into dessert dishes and serve.
    Makes 8 servings, 1/2 cup each.
    Contains 57 calories per serving.
    Diabetic exchange:
    1/2 nonfat milk and 1/4 fruit.
