Zucchini Casserole - cooking recipe
Ingredients

1 clove garlic
1 c. sliced red onion
1/2 small green pepper, thinly sliced
2 Tbsp. salad oil
3 c. (1/2-inch) sliced zucchini squash
1 (14 1/2 oz.) can pear shaped tomatoes, drained
1 tsp. salt
1/4 tsp. pepper
1/2 c. grated Parmesan cheese
Preparation

Saute garlic, onion and green pepper in hot oil.
Add zucchini and cook 2 minutes.
Place in shallow casserole dish.
Add tomatoes, salt and pepper.
Bake at 350\u00b0 for 20 to 25 minutes or until squash is tender.
Sprinkle with cheese and cook until cheese melts.
Yields 6 to 8 servings.
