Pumpkin Pecan Muffins - cooking recipe

Ingredients
    4 eggs
    2 c. sugar
    3/4 c. mayonnaise
    1 (16 oz.) can pumpkin
    1 c. chopped pecans
    2 3/4 c. flour
    2 tsp. baking soda
    1/2 tsp. salt
    1/2 tsp. ground cinnamon
Preparation
    Heat oven to 400\u00b0.
    Beat eggs and sugar with electric mixer on medium speed until well blended.
    Stir in mayonnaise; add the pumpkin and pecans.
    Mix well.
    In separate bowl, mix together the flour, soda, salt and cinnamon.
    Stir flour mixture into pumpkin mixture.
    Beat 2 minutes with electric mixer.
    Spoon batter into greased or paper-lined muffin cups (fill cups full).
    Sprinkle tops with additional chopped pecans if desired.
    Bake 15 to 20 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes before removing from the pan.
    Makes 24 muffins.
