Chinese Fried Rice - cooking recipe

Ingredients
    2 eggs, beaten
    3 Tbsp. oil
    1 c. finely shredded or diced, cooked shrimp, ham, pork or beef (optional)
    6 green onions, thinly sliced
    4 c. cold, cooked rice (cook earlier in the day)
    2 Tbsp. soy sauce
    1/2 tsp. sugar
    pepper and salt (if needed)
Preparation
    Saute rice in oil over medium heat for 15 minutes or more, until golden brown.
    Add meat, if desired.
    Heat through.
    Pour beaten eggs over rice.
    Cook, stirring often, until the eggs are set.
    Sprinkle with the onion and the soy sauce mixed with the sugar, pepper and salt.
    Stir just until blended.
