Stuffed Scalloped Tomatoes - cooking recipe

Ingredients
    2 medium tomatoes
    vegetable cooking spray
    2 Tbsp. diced onion
    1/4 tsp. salt
    1/4 tsp. pepper
    1/2 tsp. brown sugar
    2/3 c. soft breadcrumbs, toasted
    1 Tbsp. grated Parmesan cheese
Preparation
    Cut tops from tomatoes; chop tops and set aside.
    Scoop out pulp, leaving shells intact.
    Reserve pulp.
    Coat a nonstick skillet with cooking spray.
    Place over medium-high heat until hot. Add onion and saute until tender.
    Add chopped tomato tops, reserve pulp, salt and next 3 ingredients.
    Stir well and remove from heat. Spoon stuffing mixture into tomato shells and place in an 8-inch square baking dish coated with Parmesan cheese and bake at 350\u00b0 for approximately 10 minutes.
