Scalloped Potatoes - cooking recipe

Ingredients
    5 lb. potatoes, peeled and sliced
    1 lb. Velveeta cheese
    2 sticks butter
    1 can cream of celery soup
    parsley flakes
    salt and pepper
    1/2 pkg. Ritz crackers, crushed
Preparation
    Peel and slice potatoes the night before and soak in water; drain.
    Arrange in 9 x 13-inch cake pan.
    In 2-quart pan, melt butter, cheese and cream of celery soup.
    Pour over potatoes. Sprinkle with salt, pepper and parsley flakes.
    Sprinkle crushed Ritz crackers over potatoes.
    Cover with foil; leave 1 corner uncovered.
    Bake 1 to 1 1/2 hours until potatoes are tender.
