Stewed Tomatoes - cooking recipe

Ingredients
    1 (1 lb. 12 oz.) can tomatoes
    3 Tbsp. cider vinegar
    3 Tbsp. sugar
    1/4 bell pepper, finely chopped
    1 small onion, chopped
    1 rib celery, sliced thin
    freshly ground pepper
    salt to taste
Preparation
    Combine all ingredients except salt in a heavy saucepan. Bring to a boil and turn down to low immediately.
    Simmer for several hours or until mixture gets thick, stirring occasionally, and mashing tomatoes against sides of pan with spoon.
    Add salt to taste.
    If a sweeter dish is desired, add more sugar.
