Eggplant Casserole - cooking recipe

Ingredients
    2 c. eggplant, cooked and drained
    1 medium onion, chopped
    1 (No. 2) can tomatoes, drained
    1 1/2 c. grated cheese
    4 eggs
    1 c. buttered bread crumbs
Preparation
    Saute onions in 2 tablespoons butter or bacon grease. Add eggplant and tomatoes. Stir until it looks like scrambled eggs. Stir in cheese and 3/4 cup crumbs. Pour in baking dish. Add rest of crumbs on top. Bake at 350\u00b0 for 25 to 30 minutes.
