Shrimp And Eggplant Casserole - cooking recipe
Ingredients

1 large eggplant
1 lb. shrimp
1 medium onion
2 garlic cloves
6 sprigs parsley (leaves only)
salt and pepper
1 Tbsp. olive oil
bread crumbs
Preparation

Peel and cube eggplant.
To eggplant, add half same amount of water and dash of salt.
Boil for 15 minutes.
Grind remaining ingredients, except olive oil and bread crumbs, together with salt and dash of cayenne (or pepper).
Strain eggplant and press out water.
Add 1 tablespoon olive oil in skillet.
Add all ingredients; cook for 10 minutes.
Put into casserole dish.
Cover with bread crumbs.
Bake in moderate oven for 15 minutes.
