12 Bean Soup - cooking recipe

Ingredients
    2 c. Bean Mix *
    smoked ham hocks or ham bone
    3 qt. water
    2 c. canned tomatoes, chopped
    1 1/2 c. celery, chopped
    2 medium onions, chopped
    1 clove garlic, chopped fine
    1 Tbsp. lemon juice
    1 Tbsp. brown sugar
    2 Tbsp. Worcestershire sauce
    1 1/2 tsp. ginger
Preparation
    Bring first 3 ingredients to a boil.
    Simmer about 1 1/2 hours.
    Soup broth will look black during first cooking.
    Check beans to see if they are tender before adding the rest of the ingredients.
    Add all ingredients except ginger.
    Simmer another 1 1/2 to 2 hours.
    Salt and pepper to taste.
    Add ginger.
    Serve with dark bread for a complete protein.
