Chicken With Rice - cooking recipe

Ingredients
    3 to 4 lb. fryer, cut up
    2 tsp. salt
    1/2 tsp. pepper
    1/2 c. olive oil
    3/4 c. chopped onion
    2 cloves minced garlic
    1 green pepper, chopped
    1 c. canned tomatoes, drained
    1 bay leaf
    3 c. chicken broth
    1/2 tsp. saffron-curry powder
    4 c. rice
    1 (8 oz.) can peas
    2 pimentos
Preparation
    Brown chicken in olive oil. Remove from skillet. Add onion, garlic and pepper to remaining oil; saute 10 minutes.
    Add tomatoes; cook 5 minutes. Add chicken, bay leaf, chicken broth, salt and pepper.
    Bring to a boil. Add rice. Cover and bake at 350\u00b0 for 25 minutes. Add peas and pimentos. Bake for 10 minutes longer.
