Louisiana Spanish Rice - cooking recipe

Ingredients
    1/3 c. salad oil
    1 c. chopped onion
    3/4 c. chopped bell pepper
    2/3 c. uncooked rice
    1/2 tsp. black pepper
    salt to season
    3 1/2 c. fresh tomatoes or No. 2 1/2 can tomatoes
Preparation
    Mix well. Pour into a quart casserole dish.
    Bake for 1 hour and 15 minutes at 400\u00b0 to 450\u00b0.
    Stir occasionally.
