Eggplant Parmesan - cooking recipe

Ingredients
    1 small eggplant, unpeeled and cubed
    1 lb. ground beef
    3 canned tomatoes
    2 medium green peppers
    2 medium onions
    1 lb. sharp Cheddar cheese and Mozzarella
Preparation
    Cook eggplant in salted water for 5 minutes.
    Drain.
    Brown meat and drain.
    Layer in casserole.
    Salt and pepper to taste. Top with cheese.
    Bake at 400\u00b0 for 30 minutes.
