Rudi Lechner'S Chicken Soup (From The Houston Chronicle Food Pages) - cooking recipe

Ingredients
    1 large (about 5 lbs.) hen
    water
    3 carrots, sliced
    1/2 stalk (1/2 whole bunch) celery, trimmed and sliced
    1 large onion, coarsely chopped
    6 garlic cloves, crushed
    1/2 bunch parsley, plus more for garnish, washed & stemmed
    Salt and Worcestershire sauce, to taste
    12 black peppercorns
    1 (12 oz.) package noodles
Preparation
    Wash hen; remove giblets and split hen into quarters.
    Place in large pot; add water to cover.
    Add carrots, celery, onion, garlic, parsley, salt, worcestershire and peppercorns.
    Bring to a boil; reduce heat and simmer slowly 1 1/2 to 2 hours, removing grease and foam with a ladle while cooking.
