Homemade Sausage 1 - cooking recipe

Ingredients
    3 lb. fresh lean pork, ground
    1 lb. fresh pork fat, ground
    3 Tbsp. salt or to taste
    1/4 tsp. cayenne pepper
    2 tsp. fresh ground pepper
    2 tsp. crushed dried sage
Preparation
    Mix all ingredients together.
    Fry a small amount to test for seasoning.
    Add more salt if necessary.
    Form into small patties, about 1 1/2-inches in diameter.
    Fry in a heavy pan, browning on both sides, for 10 to 15 minutes.
    Drain on paper towels.
