Rio Grande Onion Pie - cooking recipe

Ingredients
    1 c. saltine crackers, crushed
    6 Tbsp. melted butter
    3 c. onion, thinly sliced
    3 eggs, lightly beaten
    1 tsp. salt
    3/4 c. light cream
    2/3 c. shredded Cheddar cheese
    dash of pepper
Preparation
    Combine cracker crumbs and 4 tablespoons butter in a 9-inch pie plate. Mix with a fork. Spread crumbs and press firmly to form a crust.
    Place remaining butter in a skillet.
    Add onion and cook over medium heat, stirring occasionally, until tender. Transfer to pie shell. Combine eggs, cream, salt and pepper in small saucepan. Stir over medium heat until hot, but not boiling.
    Pour over onion.
    Top with cheese and bake at 350\u00b0 for 30 minutes.
