Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1 small can evaporated cream
    1/2 c. Velveeta cheese
    1 stalk celery, sliced thin
    1/4 c. melted butter
    15 saltines, crumbled
    1/4 tsp. pepper
Preparation
    Dice eggplant and boil in salted water 10 minutes.
    Drain well and add other ingredients.
    Bake in casserole 45 minutes at 350\u00b0.
