Fresh Apple Cake - cooking recipe

4 c. diced apples
2 c. sugar
1 c. chopped nuts
3 c. flour
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. salt
2 tsp. baking soda
1 c. oil
1 tsp. vanilla
2 eggs, well beaten
Preparation

Mix apples, sugar and nuts together in large mixing bowl.
Let stand about 1 hour, stirring occasionally, so mixture makes its own juice (if apples are not tart, add 1 tablespoon lemon juice). Add dry ingredients and mix well.
Add remaining ingredients; mix well again.
Pour into greased, floured tube pan.
Bake at 350\u00b0 for 1 hour and 15 minutes.
