Pineapple Chicken(Diet) - cooking recipe

Ingredients
    1 c. crushed pineapple in its own juice
    1/4 c. soy sauce
    1 Tbsp. water
    1 Tbsp. vinegar
    2 tsp. prepared mustard
    2 pkg. artificial sweetener
    2 large, skinless chicken breasts
    1/2 tsp. ground ginger
    1 c. sliced, fresh mushrooms
Preparation
    In a small saucepan, combine the pineapple, soy sauce, water, vinegar, mustard and ginger.
    Heat until mixture begins to boil. Remove from heat and add sweetener.
    Place chicken in a shallow baking dish.
    Pour marinade over chicken making sure they are well coated.
    Refrigerate at least 2 hours or overnight.
    Bake, covered, at 400\u00b0 for 30 minutes.
    Add mushrooms; baste chicken and mushrooms with marinade.
    Continue to bake, covered, for 15 minutes.
    Remove cover and bake 30 minutes more or until chicken is browned and liquid is absorbed; baste during browning.
    Serve over rice or noodles.
