Stir-Fried Chicken(Low-Fat) - cooking recipe

Ingredients
    2 Tbsp. oil
    1 lb. boneless chicken
    4 c. vegetables (such as broccoli, green onions, celery, carrots, bok choy, snow peas)
    1 clove minced garlic
    1 c. chicken broth
    1 Tbsp. cornstarch
    1/4 tsp. ginger
    1 Tbsp. soy sauce
Preparation
    In skillet or wok over high heat, heat oil.
    Cut chicken into strips.
    Stir-fry until opaque; remove and set aside.
    Add 1 tablespoon oil to skillet and stir.
    Saute vegetables, any combination, until crisp-tender.
    In a cup, mix chicken broth, cornstarch, ginger and soy sauce.
    Add to skillet with the reserved chicken.
    Cook until mixture thickens, stirring frequently.
    Serve over rice.
