Plum Pudding Cake - cooking recipe

Ingredients
    1 c. all-purpose flour
    3/4 c. granulated sugar
    2 tsp. baking powder
    1/4 tsp. salt
    1/2 c. milk
    3 tsp. vegetable oil
    2 c. sliced fresh red plums (7 to 8 large)
    1 c. packed brown sugar
    1 tsp. ground cinnamon
    1 c. boiling water
Preparation
    Heat oven to 350\u00b0.
    Mix flour, granulated sugar, baking powder and salt.
    Beat in milk and oil until smooth.
    Pour into ungreased square pan, 8 x 8 x 2-inches.
    Top with plums.
    Mix brown sugar and cinnamon; sprinkle over plums.
    Pour boiling water on plums. Bake 60 to 70 minutes or until toothpick inserted in center comes out clean.
    Serve warm and, if desired, with sweetened whipped cream.
    Makes 6 servings; 410 calories per serving.
