Coco-Nutty Raisin Banana Muffins - cooking recipe
Ingredients

1 2/3 c. all-purpose flour
1/4 c. granulated sugar
2 tsp. Calumet baking powder
1/2 tsp. salt
1/2 c. plus 2 Tbsp. Dole sliced almonds
1 1/3 c. (3 1/2 oz.) Baker's Angel Flake coconut
1/2 c. Dole raisins
2 small Dole bananas, chopped (about 1 1/3 c.)
1 egg
1/2 c. milk
1/4 c. plus 2 tsp. firmly packed brown sugar
5 tsp. butter or margarine, melted
1/4 tsp. cinnamon
Preparation

Mix
flour, granulated sugar, baking powder
and
salt. Stir in 1/2 cup almonds, 1 cup coconut and
raisins;
mix
in bananas. Beat egg, milk, 1/4 cup brown sugar
and
3
tablespoons
butter. Add to flour mixture;
mix
until\tmoistened. Spoon into 12 greased muffin pans.
Mix
remaining
coconut, 2 tablespoons almonds, 2 tablespoons brown sugar\tand
cinnamon; sprinkle evenly over each muffin.
Bake at 375\u00b0
for
about 25 minutes,
or until cake tester inserted in
center
comes
out clean.\tIf muffins brown too quickly, cover
with foil.
Makes 12 muffins.
