Welsh Rarebit - cooking recipe

Ingredients
    4 Tbsp. butter
    2 c. milk
    dash of pepper
    toast or crackers
    4 Tbsp. flour
    1/3 tsp. salt
    1 c. grated mild or sharp cheese
Preparation
    Heat butter in double boiler; remove from heat and add flour. Return to heat; add milk gradually, stirring constantly, until sauce boils.
    Add seasonings; simmer 5 minutes.
    Add grated cheese and stir until melted.
    Serve on toast or crackers (also good on macaroni).
