Eggplant - cooking recipe

Ingredients
    1 eggplant
    1 c. boiling water
    1 tsp. salt
    2 Tbsp. butter
    1/4 c. dried onion
    2 c. soft bread crumbs
    1 c. evaporated milk
    1/2 c. buttered bread crumbs
Preparation
    Peel eggplant.
    Cut into 1/2-inch pieces.
    Add water and salt. Boil until tender. Cook onion in butter until light yellow.
    Add eggplant, 2 cups bread crumbs and milk.
    Put in casserole dish and cover with buttered bread crumbs.
    Bake at 350\u00b0 for 20 minutes.
