Quail Or Dove - cooking recipe

Ingredients
    quail or dove
    beaten eggs
    milk
    salt and pepper to taste
    flour
Preparation
    Scald
    and
    clean
    quail
    or dove.
    Do not skin.
    Split quail or\tdove down back and flatten out.
    Place cut side next to pan. Use
    a
    batter
    made from beaten eggs and milk.
    Salt and pepper to\ttaste
    and
    roll
    in
    flour.
    Cook to a golden brown;
    turn heat down and simmer until tender.\tUse drippings to make gravy. Goes well with biscuits and mashed potatoes.
