Healthy Banana Bread - cooking recipe
Ingredients

1 1/2 c. all-purpose flour
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. baking powder
1/4 tsp. nutmeg
2 egg whites
1 c. sugar
1 c. mashed banana
1/4 c. oil
1/2 c. currants
1/2 c. nuts (optional)
nonstick cooking spray
Preparation

Stir together flour, baking soda, cinnamon, baking powder, nutmeg and a dash of salt; set aside.
In a mixing bowl, beat together egg whites, sugar and banana.
Add oil and mix well. Stir flour mixture into banana mixture.
Fold in currants and nuts.
Spray an 8 x 4 x 2-inch pan with nonstick cooking spray. Pour batter into prepared pan.
Bake at 350\u00b0 for 55 to 60 minutes. Cool 10 minutes in the pan.
Remove and cool on a wire rack.
