Italian Capocollo With Eggs - cooking recipe

Ingredients
    2 Tbsp. olive oil
    2 slices capocollo (1/8-inch thick)
    2 eggs
    salt and pepper
Preparation
    Pour oil in frying pan, and arrange slices of capocollo in oil.
    Break 1 egg over each slice of meat.
    Sprinkle very lightly with salt and pepper.
    Fry gently until egg white is set.
    Remove with pancake turner, and serve immediately.
    Serves 1.
