Sweet Vidalia Onion Casserole - cooking recipe

1 box cornbread stuffing mix
4 to 6 medium Vidalia onions
2 Tbsp. butter
2 c. sharp cheddar cheese
Preparation

Preheat oven to 350\u00b0. Prepare stuffing mix according to package directions, set aside. Slice onions about 1/4 inch thick. Melt butter in a 9 x 13 inch baking dish. Cover bottom of dish with a layer of onion slices, top with a layer of stuffing mix. Sprinkle one cup of cheese. Repeat layers, reserving about 2 tablespoons of stuffing mix for the top. Bake 25 to 35 minutes or until hot and bubbly and lightly browned.
