Zucchini Soup - cooking recipe
Ingredients

1 1/4 or 1 1/2 lb. Italian sausage (sweet or hot)
2 c. celery (1/2-inch pieces), cut on an angle
2 c. zucchini, sliced into 1/2-inch pieces
1 c. chopped onion
2 green peppers (in 1/2-inch pieces)
2 (28 oz.) cans tomatoes (whole), peeled
2 tsp. salt
1 tsp. Italian seasoning
1 tsp. oregano
1/2 tsp. garlic powder
1 tsp. sugar
1/4 tsp. basil
Preparation

Brown sausage in a large skillet.
Drain off excess fat.
Put celery, onion, green pepper and tomatoes and add all seasonings in large pot and cook while sausage is browning, then add sausage and cook for 10 minutes or so.
Stir occasionally.
Add zucchini and simmer covered until vegetables are soft, not crunchy.
Do not let the vegetables get mushy.
Makes 3 1/2 quarts.
