Sugar Cure For Meat(Pork) - cooking recipe
Ingredients

2 c. or 1 pt. coarse salt
2 Tbsp. black pepper
1 Tbsp. red pepper
3 Tbsp. brown sugar
Preparation

Mix ingredients together; this will cover 1 average piece of meat.
Lay on brown paper to apply.
Wrap it up in brown paper. Prop hams and shoulders up on shank end so they will drain.
In a few days, apply a little more of the mixture to each piece lightly.
Wrap well with brown paper.
Place in muslin bags and hang up.
Hang hams and shoulders with shank side down.
Meat should be thoroughly cold and hung in a cold place.
