Zucchini Relish(Low Sodium) - cooking recipe

Ingredients
    10 c. zucchini, chopped
    2 sweet peppers, chopped
    2 1/2 c. sugar
    1 Tbsp. nutmeg
    1 Tbsp. turmeric
    4 c. onions, chopped
    3 c. white vinegar
    1 Tbsp. celery seed
    1 Tbsp. dry mustard
    1 tsp. black pepper
Preparation
    Mix the zucchini, onions and peppers and let stand overnight. Drain and rinse in cold water.
    Drain again and pour into large kettle.
    Add remaining ingredients and bring to a boil.
    Pour into hot sterilized jars and seal.
    Process in hot water bath for 20 minutes.
    Makes 7 to 8 pints.
