Cheddar Skins - cooking recipe

Ingredients
    2 baking potatoes
    1 c. shredded Cheddar cheese
    4 slices lean bacon, cooked and diced
    sour cream (optional)
Preparation
    Preheat the oven to 400\u00b0. Wash and wrap the potatoes in aluminum foil. Pierce each potato with a fork and bake for 1 hour. Remove the foil from the potatoes and cut them in half lengthwise. With a spoon, scoop out 1/4 to 1/2 of each potato. Use the potato insides in another recipe. Sprinkle the cheese evenly over the potatoes. Add the bacon. Bake until the cheese melts. Serve with sour cream if desired.
