Shrimp Curry Rice - cooking recipe

Ingredients
    1/4 c. chopped onion
    2 Tbsp. vegetable oil
    1 Tbsp. vinegar
    1/2 tsp. curry powder
    1 1/2 c. cooked rice
    1 c. diced celery
    1/4 c. diced green pepper
    2 1/2 c. cooked shrimp
    3/4 c. mayonnaise
Preparation
    Combine onion, vinegar, oil and curry powder in a bowl.
    Stir in rice and chill 2 hours to blend flavors.
    Just before serving, add celery, green pepper, shrimp and mayonnaise (cut shrimp in desired pieces).
    Serve on lettuce.
    Serves 6.
