Pineapple Cheesecake - cooking recipe

1 9-inch graham cracker crust
1/2 c. boiling water
1 envelope gelatin
1/2 c. sugar
1/2 c. pineapple juice (or lemon or lime juice to make a lemon cheesecake or lime cheesecake)
8 oz. cream cheese, softened
whipped cream
Preparation

Dissolve gelatin in boiling water; stir until completely dissolved.
Add sugar and pineapple juice and allow to cool. Soften cream cheese and gradually stir in gelatin mixture until well blended.
Pour into pie shell and refrigerate until firmly set.
Top with whipped cream before serving.
