Spicy Vegetable Chili - cooking recipe

Ingredients
    5 Tbsp. light olive oil
    2 chopped medium onions
    3 cloves minced garlic
    2 medium zucchini, diced
    2 diced red bell peppers
    1 to 2 minced jalapeno peppers
    1 (28 oz.) can Italian plum tomatoes
    5 large fresh plum tomatoes, diced
    1/2 c. dry red wine
    2 Tbsp. chili powder
    1 Tbsp. cumin
    2 tsp. oregano
    1 can kidney beans
    1 can black olives
    juice of 1 large lemon
    chopped fresh cilantro on top
Preparation
    Heat oil.
    Add onions and garlic.
    Add zucchini, red pepper and jalapenos and cook for 5 minutes.
    Add all other ingredients. Add salt and pepper to taste.
    Simmer.
    Serve with grated Jack cheese and cilantro.
