Citrus Chicken With Dates - cooking recipe
Ingredients

4 boneless, skinless breast halves or your choice
salt and pepper to taste
2 cloves garlic, pressed
1 tsp. rosemary, crumbled
1/2 tsp. olive oil
1 c. pitted dates, halved or quartered
1/2 c. frozen or canned pearl onions
1 (8 oz.) can pineapple slices or chunks (in juice)
zest and juice from 1 orange
1/2 tsp. cornstarch
1/2 tsp. lemon zest
1/2 tsp. juice
2 c. hot cooked rice or mashed potatoes (your choice)
Preparation

Sprinkle chicken with salt and pepper. Rub with garlic, rosemary and cinnamon (I roll in Shake 'n Bake mixed with onion soup mix).
Brown quickly in oil. Add 1/4 cup of cut dates and onions to skillet. Cook on low, covered, until chicken is tender. Combine pineapple juice with lemon and orange juice. Stir in cornstarch and add to skillet.
Boil and thicken slightly. Add pineapple and remaining dates.
Heat through.
Remove from heat. Add orange and lemon zest.
Serves 4.
